
If you’ve been following me for a while you know one of my go-to weeknight dinners is a chicken caesar salad. I’ve gotten lots of requests to share my secret on how I pull these salads together and I’m finally caving… basically because it’s the easiest thing ever (really a no secret secret recipe).
I make our salads one of two ways – one is slightly easier (if that’s even a thing because this is the EASIEST week-night throw together meal ever) and the other is a bit more prep.
The EASIEST
Spoiler: bagged salad kits.
Yep that’s right – I use the bagged salad kits that you get at the grocery store. They have Kale Caesar Kits, Lite Caesar Kits, Greek Yogurt Caesar Kits and I’ve tried them all! We will mix up the bag with whatever is included (i.e. Kale or Romaine, Croutons, Parmesan Cheese) and then plate it up with a some grilled chicken.

Still EASY

Another way we make our salads is by making Molly Kreb’s (@spicesinmydna) homemade caesar from her Eat More Plants cookbook, chopping up some romaine lettuce and tomatoes and then adding in some croutons and parmesan crisps. You also can utilize any bottled caesar dressing too if that’s more your style!
In Molly’s cookbook she shares a recipe for a chickpea caesar salad with her dressing which is another topping we will swap in instead of chicken every now and then.
Breakdown of what you need:
- Eat More Plants Caesar Dressing (or a bottled caesar of your choice)
- Romaine Lettuce (I recommend Organic Girl Romaine Heart Leaves)
- Grape Tomatoes (halved)
- Croutons (I recommend 365 Caesar Croutons)
- ParmCrisps
- Grilled Chicken or Roasted Chickpeas
