Happy Sunday All! As usual this weekend flew by way too fast – but a productive Sunday always helps for me to keep those Sunday scaries at bay (and make Sunday’s, awesome).

This morning I sat down and planned out our week full of meals – something I did scarcely last year – wrote out a grocery list and headed to the store. If you’re #cravingcurrently a menu for the week, this post is for you.

I like to mix it up during the week with different types of meats/dishes so I consistently rely on Pinterest to keep our weekday menu fresh and interesting. Here are the four I picked for this week – I must say, I’m pretty excited!

Monday – Buffalo Chicken Bowls 

I’m a sucker for anything buffalo so when I saw this recipe I just had to try it. Pretty Providence makes it sound so easy and simple that it sounds just perfect to push those Monday blues away.

Tuesday – Gimmie Some Oven – Slow Cooker Tacos Al Pastor 

On Tuesday’s, I eat tacos – there is no question or other thoughts. I’ve tried multiple recipes from ‘Gimmie Some Oven’ and they are delicious each and every time. So when I saw this recipe pop up on Pinterest when I searched tacos, I knew I had to try it.

Wednesday – Skinnytaste Skillet Chicken Cordon Bleu 

Skinnytaste is one of my FAVORITE sites for recipes – Gina really knows how to pack the flavor in her recipes without adding the extra calories. I’ve never made Chicken Cordon Bleu so I’m super excited to try it. I even picked up some asparagus to pair as she did here.

Thursday – Skinny Mom Easy Beef Enchiladas 

Enchiladas are something I’ve never tried before – as easy as they seem for some reason my go-to at home for Mexican is typically tacos. Beef isn’t my favorite meat either (as you saw from my post last week on the short ribs) but my boyfriend is a carnivore if you’ve ever met one 🙂 – so I figured after two chicken dishes in one week – some beef was well overdue. I’ve always had amazing meals from Skinny Mom recipes so I’m excited to give this one a shot!

On Friday’s we typically go out for a happy hour or pick something up so I didn’t plan anything for then – I tell myself we deserve it after a long week.

Welp, that’s it – my four meals that I have planned for this week! We’ll see how it goes and maybe I’ll even share some pictures of my own if they turn out as beautiful as these other bloggers have depicted ;).
